A honey of a source of antioxidants

A new study of Spanish honey varieties revealed that honey contains antioxidants, which help eliminate cancer-causing free radicals.

Rosa Ana Perez, research scientist and co-author of the study at the Instituto Madrileno de Investigacion y Desarrollo Rural, Agrario y Alimentario in Madrid, said that honey is rich in antibacterial and antioxidant agents.
Antioxidants eliminate free radicals, substances known to generate different types of diseases, such as 'neurodegenerative disease, chronic inflammatory disease, cancer, cardiovascular disease and aging', the researcher explained.
Ms Perez and the other researchers who participated in this study reviewed thirty six different honey varieties. The varieties were divided into two main categories: clover honey, which bees make from the nectar of flower blossoms, and honeydew honey, which bees produce from a substance secreted by certain aphids that live off plants. Honeydew honey is less common and tends to be more acidic, but contains a larger amount of antioxidants.
The study's results were published was published in the February edition of the 'Journal of the Science of Food and Agriculture'.
Honeydew honey is not as common as clover honey; it is produced in just a few parts of the world, including Greece, the German Black Forest and the Himalayas, and is often considered a delicacy.
