On 24 January 2009 Food-management.com reported: Unlike many college campuses that offer vegetarian dishes in addition to regular menu offerings, Maharishi University of Management (M.U.M.) in Fairfield, Iowa offers a complete buffet of 100 per cent organic and vegetarian meals in its dining room, which also reflects principles of Ayurveda, the ancient system of natural health care. It is a joy for Global Good News service to feature this news, which indicates the success of the life-supporting programmes Maharishi has designed to bring fulfilment to the field of health.

Maharishi University of Management's dining services provider Aladdin Food Management uses as many locally sourced ingredients as possible in their meal programmes, which also includes catered meals.

All meals are made from scratch, including breads and pastries. Dairy products—milk, yogurt, and ice cream—are purchased from a nearby organic dairy.

Food-management.com reported, 'While the all organic/vegetarian requirement is nearly unique in the onsite dining world,' the M.U.M. meal programme features another special element in adopting the principles of Ayurveda*. Ayurveda is a system of natural medicine and dining originating in India that includes detailed knowledge of foods and food qualities recommended as beneficial to health, as well as those best avoided. In addition, Ayurveda recommends specific foods for different seasons.

In preparation for their Maharishi University job, the Aladdin Food Management team took Ayurvedic classes. They also hired Executive Chef Richard Hackett, who had previously worked at a resort that served Ayurvedic food.

Food-management.com reported, 'The scope of the operation is considerable, with a dining staff of around 50, led by Foodservice Director Bob Hicks, preparing more than 1,600 meals a day in the school's Annupurna Dining Commons. Aladdin also manages the school's retail outlets, on-campus catering and foodservices for an onsite K-12 private school that accounts for up to 120 meals a day.'

Aladdin is using its M.U.M. experience to maximum advantage by offering organic meals to their other accounts, 'including four of the company's university and private school accounts', the article stated.
