The article features recognition recently given to the vegan fare offered by Annapurna Dining Hall at Maharishi University of Management in Fairfield, Iowa, USA—in the form of an award from the organization People for the Ethical Treatment of Animals.
The university was a 2011 top-10 nominee in the category of Most Vegan-Friendly Small American Colleges. Factors considered included the number of votes in an online competition sponsored by PETA2, quality and variety of vegan food, schools' enthusiasm in promoting their options, and student feedback.
The PETA2 website said that MUM is ''the only school on this year's list with a completely vegetarian dining hall.'' MUM is the first U.S. college to offer an organic, vegetarian, freshly prepared menu—one reason, the university's website comments, that their students are 'healthier when they graduate than when they enroll'.
The article includes a number of compelling points about why MUM emphasizes the use of vegetarian, organic food—among them that both are 'healthier for the individual and the environment'.
